Crumbcake Muffins

Topping:

1 c flour

1/3 cup butter - softened

1/3 cup packed brown sugar

1/4 tsp cinnamon

 

Muffins

1 3/4 cups flour

3/4 cup sugar

1 3/4 tsp baking powder

1/2 tsp salt

1 egg + 1 egg yolk

1 tsp. vanilla

1 cup milk

1/2 cup butter - melted & cooled

1/4 tsp almond extract

Heat oven to 400º. Grease muffin cups.

In small bowl stir together topping ingredients until mixture resembles coarse crumbs. Set aside.

In large bowl, stir together floour, sugar, baking powder & salt. IN anothe rbowl stir together milk, butter, eggs, vanilla & almond extract until blended. Make well in center of dry ingredients - add milk mixture & stir just to combine. Spoon batter into muffin cups. Sprinkle crumb topping over each muffin. Bake 20-25 min. Cool muffins 5 min. before removing from pan. Sprinkle with sugar.
